pork tenderloin
trimmed
white wine
orange
squeezed & zested
fresh graded black pepper

orange marmalade

Combine all ingredients in a ziplock bag.
Cut any fat off the tenderloin and add to the marinade.
Seal the ziplock bag and massage the meat for a few seconds to ensure it is evenly coated with the marinade.
Marinate for at least 2-4 hours, or preferably overnight.
Preheat oven to 425°F (220°C).
Heat an oven-safe skillet on high heat with 1 tablespoon of olive oil.
Remove the pork tenderloin from the bag, shaking off any excess marinade.
Season with more pepper and Italian seasonings.
Sear each side of the tenderloin for about 3 minutes until nicely browned.
Transfer the skillet to the preheated 425°F oven and bake for 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
If desired, brush more orange marmalade on top of the tenderloin during the last few minutes of baking for a richer glaze.
