Preheat barbeque to high heat on both sides.
Prepare the chicken by placing it breast side down on a baking sheet.
Using kitchen shears, cut down each side of the backbone and discard it.
Rinse the chicken with cool water.
Place the chicken back on the baking sheet, breast side down.
Sprinkle your desired amount of dry rub seasoning on the inside of the chicken and massage it into the meat.
Flip the chicken over, press it down so it lays flat, and repeat the rub on the outside.

Turn off one side of the grill.
Place the chicken on the turned-off side, breast side down, for indirect heat cooking.
Grill for 15 minutes.
Flip the chicken over in the same area on the grill.
Cook for another 25 minutes, or until the internal temperature reaches 180°F.
Remove the chicken from the grill and place it on a clean baking sheet or plate.
Tent the chicken with tin foil for at least 10 minutes before cutting.
