Arrange mozzarella, basil leaves, and grilled bread/crackers on a platter.
Preheat grill for direct grilling to high heat.
Ideally, use a charcoal grill with embers piled at the bottom.
If using gas grill, preheat to superhot.
Skewer a mozzarella cube.
Roast over fire, turning to melt evenly.
If using gas grill, bring mozzarella close to fire without touching the grate.
When mozzarella melts and browns (1-2 mins over charcoal, longer over gas), scrape onto grilled bread with a knife or fork.
Do not eat melted cheese directly from the hot skewer.
Top with basil leaf and sun-dried tomato.
Place another piece of grilled bread on top.
Eat immediately.
If using dried sun-dried tomatoes, soak them in boiling water for 1 hour.
Drain and blot dry.
Toss with olive oil.
