Clean the banana blossom: Oil your hands, peel purple layers, and remove florets.
Remove stamen and translucent cover from each floret.
Chop florets finely and soak in diluted buttermilk with turmeric and salt overnight or for at least 30 minutes.
Drain water from florets.
Pressure cook florets with 1/2 cup water up to 2 whistles. Mash gently.
Heat mustard oil in a heavy-bottomed pan over low flame until smoking.
Add bay leaves and cumin seeds.
Add grated ginger and garlic; sauté for 30 seconds.
Stir in cubed potatoes, chilli powder, salt, and 1/4 cup water. Cook for 5-7 minutes until potatoes are cooked.
Add cooked banana blossom and sugar; mix well.
Cook covered for 2 minutes.
Adjust salt and add ground coconut-chilli mixture.
Add garam masala powder; stir well over medium flame.
Switch off heat and garnish with ghee. Serve hot with rice and ghee.
