Preheat oven to 325°F (160°C). Grease a 9-in. springform pan and wrap the bottom with a double layer of heavy-duty foil.
Combine chocolate wafer crumbs, sugar, and melted butter in a large bowl. Press the mixture firmly onto the bottom of the prepared pan to form the crust.
In a small saucepan, combine heavy whipping cream and instant coffee granules. Heat over low heat, stirring until coffee granules are completely dissolved. Remove from heat and let cool slightly.
In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
Beat in the cooled coffee mixture and vanilla extract until well combined.
Add the eggs, one at a time, beating on low speed just until incorporated. Do not overbeat.
Gently fold in 3/4 cup of miniature semisweet chocolate chips.
Pour the cheesecake batter over the prepared crust in the springform pan. Sprinkle the remaining 1/4 cup of chocolate chips evenly over the top.
Place the springform pan in a larger baking pan. Carefully pour hot water into the larger pan, reaching about 1 inch up the sides of the springform pan (creating a water bath).
Bake in the preheated oven for 60-70 minutes, or until the center of the cheesecake is just set and the top appears dull.
Remove the springform pan from the water bath. Let cool on a wire rack for 10 minutes.
Carefully run a knife around the edge of the pan to loosen the cheesecake from the sides. Cool for 1 hour longer.
Refrigerate the cheesecake overnight to allow it to fully set.
Remove the sides of the springform pan before serving. Slice and serve chilled.
