In a large bowl, combine ground pork, minced beef, finely chopped onion, crushed garlic cloves, harissa, sweet paprika, smoked paprika, cayenne pepper, thyme, baking powder, soaked and ground caraway, marjoram, salt, black pepper, and allspice (if using).
Knead the mixture thoroughly for about five minutes until all ingredients are very well combined.
Divide the meat mixture into small, equal-sized portions.
Roll each portion into a small sausage shape, approximately 3-4 inches long.
Heat olive oil in a large, heavy-bottomed frying pan or griddle over medium heat.
Cook the sausages for 20-30 minutes, turning them frequently to ensure even cooking.
If desired, baste the sausages with a little meat stock, chicken stock, or vegetable stock to keep them moist during cooking.
Ensure the sausages are cooked through before removing from the pan.
