Place icing sugar, milk, and butter into a glass, microwave-friendly bowl.
Microwave on High for 3 to 4 minutes, or until the mixture has melted.
Add vanilla essence and coconut.
Beat the mixture until thick.
Divide the mixture in half and put the other half in another bowl.
Add a few drops of red food coloring to one half of the mixture.
Press the white mixture (no food coloring) into a 20cm square tin.
Leave until firm before pressing the pink mixture (food coloring) on top.
Refrigerate until firm, then cut into squares.
