Blend 1 cup of cooked black beans to a paste in a mixer jar. Prepare all other ingredients.
Heat olive oil in a large saucepan over medium heat.
Add finely chopped garlic and onions. Sauté with a pinch of salt until the onions are translucent.
Add sliced carrots and 1 cup of vegetable stock. Cook for 3-4 minutes.
Add the remaining black beans, sweet corn, and diced green zucchini. Bring to a boil.
Add the pureed black beans, tomato puree, roasted cumin powder, red chilli powder, sliced pickled jalapenos, remaining vegetable stock, reserved liquid from the beans can, and lemon juice.
Cook for 2-3 minutes until the soup returns to a boil.
Season with salt and black pepper powder to taste.
Garnish with fresh coriander leaves.
Serve hot with sliced avocado, sour cream, and tortillas on the side.
