Arrange 10 bacon slices side by side on the wire rack.
Weave the remaining 7 bacon slices into a lattice pattern.
Place a large (10-inch wide) bowl upside down on top of the lattice bacon.
Use kitchen shears to trim the edges of the lattice pattern around the rim of the bowl to form a circle lattice bacon crust. Reserve bacon trimmings.
Remove the bowl.
Bake the lattice crust in the preheated oven until the bacon is crisp, about 30 to 35 minutes.
Meanwhile, place reserved bacon trimmings in a nonstick skillet over medium heat.
Cook, stirring occasionally, until lightly browned, about 6 minutes.
Add sausage to the skillet and continue to cook, stirring occasionally, until crisp, about 6 more minutes.
Transfer the sausage mixture to a plate lined with paper towels to drain.
Remove the bacon crust from the oven.
Top the crust evenly with pizza sauce and 1/2 cup of the cheese.
Top with pepperoni, Canadian bacon, and the cooked sausage mixture.
Sprinkle the pizza with the remaining 1 cup of cheese.
Bake at 400°F until the cheese is melted, 8 to 10 minutes.
Remove from the oven and garnish with crushed red pepper.
Cut into 8 slices and serve.
