Polish sausage

Slice the Polish sausage into rounds.
Brown sausage slices in a large skillet, then drain on paper towels and reserve drippings in the pan.
Steam or cook carrots and cauliflower until tender.
Add sliced zucchini and onion to the skillet with the reserved sausage drippings.
Add butter to the skillet and fry the zucchini and onion until tender and the onion is almost transparent.

Drain the cooked carrots and cauliflower.
Place the sausage, zucchini, onion, carrots, and cauliflower in a 9x13 inch casserole dish.
Sprinkle shredded Monterey Jack or Swiss cheese on top.
Bake at 325 degrees Fahrenheit for 10 minutes, or until the cheese is melted and bubbly.
Serve hot. Summer squash can be used in place of zucchini.
