Soak the sticky rice in water for at least 4 hours, ideally overnight (7 hours).
Rinse the soaked rice until the water is clear of starch.
Cover the rice with cheesecloth and steam for approximately 25 minutes, until soft and cooked through.
While the rice is steaming, prepare the coconut milk mixture.
Combine coconut milk, sugar, palm sugar, and salt in a saucepan.
Bring the mixture to a boil, stirring until the sugars are dissolved.
Remove from heat.
Once the rice is cooked, pour the coconut milk mixture over it.
Gently stir to combine.
Cover the rice with another cheesecloth and let it cool and set.
To make the durian mixture, combine coconut milk and sugar in a saucepan.
Add salt and durian.
Simmer for 10 minutes, or until the durian is soft.
For mango sticky rice: scoop sticky rice onto a serving plate.
Peel a ripe mango and slice or scoop the flesh beautifully.
Arrange the mango alongside the sticky rice.
Top with crispy beans, sesame seeds, and coconut milk.
For durian sticky rice: scoop sticky rice onto a serving plate.
Serve with durian sauce.
