Preheat the oven to 350F.
Grease a 7x7 square Pyrex dish or a 9-inch circular dish, or spray with baking spray.
Beat together sugar and eggs until the mixture is thick and yellow.
Mix in the apricot jam.
Melt 1 Tablespoon of butter and mix in the vinegar until combined.
In a separate bowl, sift together flour, baking soda, and salt.
Add the dry ingredients to the wet mixture along with the milk and beat well.
Pour the mixture into the greased oven pan.
Bake until the pudding is golden brown and has risen, approximately 30-45 minutes.
While the pudding is baking, prepare the sauce.
Melt 7 Tablespoons of butter.
Mix in the heavy whipping cream, sugar, hot water, and vanilla extract.
As soon as the pudding comes out of the oven, pour the sauce evenly over it.
Let it stand for a few minutes before serving.
Serve warm.
