Combine 2/3 volume of water and 1/3 vinegar with salt in a pot.

Bring the mixture to a boil.

Add the peeled and cut potatoes to the boiling mixture.

Add the drained potatoes to the sauce pan.

Toss the potatoes to coat them evenly with the oil and spice mixture.

Place the potatoes on a serving platter or dish.

Sprinkle chopped parsley all over the potatoes.

Serve the Italian potatoes immediately.
