Prepare the Remonce: Cream together softened butter, sugar, and cinnamon (if using). Refrigerate until needed.
Prepare the Streusel Filling: Whisk together flour and sugar. Drizzle in melted butter and mix.
Prepare the Cheese Filling: Blend softened cream cheese with sugar until combined. Mix in the egg yolk and chill.
Prepare the Glaze: Whisk milk into confectioners' sugar until smooth and it ribbons off the whisk.
Preheat oven to 350 degrees F (175 degrees C).
Roll out each sheet of puff pastry on a floured surface to a 20x10 inch rectangle.
Cut each sheet into 20 (5-inch) squares.
For Turnovers: Spread each square with filling. Brush two edges with egg wash. Fold over to make a triangle. Cut three diagonal slits on top.
Place turnovers on a parchment-lined sheet tray. Brush with egg wash and sprinkle with cinnamon sugar.
Bake turnovers for 20 minutes or until golden brown.
For Danish: While still warm, brush pastries with warmed apricot jam. Sprinkle with sliced almonds and drizzle with glaze.
For Pinwheels: Sprinkle squares with cinnamon sugar. Cut a slit from each corner towards the center, stopping just short.
Fold every other tip into the center, overlapping and pressing firmly. Place on a parchment-lined baking sheet.
Press the center down and fill with 1/2 teaspoon of jam or filling.
Brush pinwheels with egg wash and sprinkle with coarse sugar. Bake for 20 minutes or until colored.
For Envelopes: Turn the square with a point at the top. Add 2 tablespoons of cheese filling from top to bottom.
Egg wash the side corners. Fold one corner over the filling and press firmly. Fold the other corner over and press to seal.
Place envelopes on a lined baking sheet. Brush with egg wash and sprinkle with sugar and chocolate. Bake for 20 minutes or until browned.
For Cheese Pockets: Place a tablespoon of cheese filling in the middle of the square. Brush corners with egg wash.
Fold two opposite sides up and press firmly. Bring the bottom corner up and press over the fold. Bring the top corner up and across the fold, then pinch to seal.
Egg wash and sprinkle with streusel topping. Bake for 25 minutes until browned.
