Tomatillo Ranchero Sauce

Prepare the tomatillo ranchero sauce.
Place tomatillos, Anaheim chilies, onion, garlic, oregano, salt, pepper and 1 cup of hot water in a Vita-Mix or blender.
If using a Vita-Mix, blend on high speed for 4-5 minutes until steam escapes.
If using a standard blender, saute tomatillos, garlic, and onion in oil until soft (approx. 5 minutes).
Add hot water and spices, simmer for 20-30 minutes. Blend until smooth.
Adjust sauce seasoning with salt and pepper to taste.
Refrigerate the sauce until ready to use.
Preheat oven to 350 degrees Fahrenheit.
Lightly spray ramekins with non-stick cooking spray.
Place a cut tortilla in the bottom of each ramekin.
Top each tortilla with an egg in the center.
Sprinkle 1/4 of the canned beans around each egg, leaving the yolk exposed.
Pour 1 - 1 1/2 cups of tomatillo sauce over the beans, again leaving the yolk exposed.
Top with grated cheddar cheese.
Bake for 15 minutes, then lightly cover with foil and bake an additional 5 minutes, or until the egg white is set and the yolk is slightly runny.
Top with additional grated cheese if desired.
Serve and enjoy!
