Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Prepare bread pans, muffin pan, or tubes by spraying with cooking spray or buttering and lightly flouring.
In a large bowl, cream together the butter and sugar until light and fluffy.
Add the remaining ingredients (flour, baking powder, baking soda, salt, eggs, mashed banana, crushed pineapple, and shredded coconut) in the order given.
Mix until all ingredients are well blended.
Pour the batter into the prepared pans or tubes, filling them about 2/3 full.
If using tubes, place wax paper at each end before putting the caps on.
If using tubes, place vertically in the oven.
Bake at 350 degrees Fahrenheit (175 degrees Celsius) for up to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 15 minutes before removing to a wire rack to cool completely.
Serve warm or cooled.
