Prepare the filling: Place ghee in a skillet or kadai on medium heat.
Add chopped dates and figs to the melted ghee.
Cook, stirring occasionally, until the dates and figs turn mushy and begin to form a ball, leaving the sides of the pan.
Turn off the heat and set the pan aside to cool.
Once cool enough to handle, form the mixture into small, marble-sized balls and set aside.
Prepare the Kachariyu: In a separate pan or kadai, lightly toast sesame seeds, coconut, almonds, and melon seeds.
While still warm, transfer the toasted mixture to a grinder.
Add jaggery and grind finely.
Add dry ginger powder, cardamom powder, and nutmeg powder to the ground mixture.
Pulse the mixture a couple of times until well combined.
Observe that the sesame seeds and coconut have released their oils, resulting in a crumbly mixture.
Take a spoonful of the Kachariyu mixture into the palm of your hand.
Lightly press the mixture, create a small indentation in the center, and place a date and fig filling ball in the indentation.
Bring the Kachariyu mixture together to enclose the filling and form a small ladoo.
Repeat the process until all the ladoos are formed.
Optional: Roll the ladoos in desiccated coconut or finely chopped almonds for garnish.
Store the Kachariyu ladoos in an airtight container.
Serve as a festive ladoo on any occasion or as a mid-morning snack.
