Wash tomatoes and cilantro.
Cut tomatoes and onion into rough cubes.
Place the cut tomatoes and onion in a large bowl.
Cut garlic clove in half lengthwise and add to the bowl.
Cut fresh jalapenos into small rounds and add to the bowl.
Roughly chop fresh cilantro and add to the bowl.
Add lime juice to the bowl.
Mix ingredients together well.
Add a portion of the mixture to a chopper.
Chop the mixture into a very fine chop, almost but not quite pureed.
Taste halfway through to test heat level.
If the salsa is too spicy, stop adding more jalapenos to the chopper.
Transfer the chopped mixture to a different bowl.
Continue adding portions of the mixture to the chopper and chopping until the entire mixture is done.
Add salt and black pepper to taste.
Cover the salsa and refrigerate for 30 minutes to allow flavors to meld.
