In a large mixing bowl, combine bread flour, all-purpose flour, and salt.
Add yeast and very warm water to the flour mixture.
Stir with a spoon until the dough starts to pull away from the sides of the bowl and becomes smooth.
Cover the dough and let it rise for 1 hour in a warm place.
Pour the dough onto a greased cookie sheet or a parchment paper-lined pan or Silpat.
With greased hands, spread the dough across the pan.
Use your knuckles to spread the dough out, forming dimples across the surface. Shape the dough into a rectangular shape.
Using a silicone pastry brush, brush melted butter across the surface of the bread.
Sprinkle generously with cinnamon, sugar, and brown sugar.
Bake at 350F (175C) for about 20 minutes, or until the bread is golden brown.
Cool slightly and cut into squares using a pair of scissors.
