In a bowl, combine lukewarm milk, sugar, and yeast. Let it sit for 10 minutes until frothy.
In a large vessel, add flour and salt.
Add 2 tablespoons of olive oil to the flour.
Create a well in the flour and pour the milk mixture into it.
Knead the dough until it is soft, adding water if needed.
Sprinkle flour on a flat surface and knead the dough for 10 minutes.
Grease a baking tray and place the dough on it. Spread it evenly.
Cover with a cloth and let it rise in a warm place for 2 hours.
Prepare the topping by heating 2 tablespoons of olive oil in a saucepan.
Add sliced onions and 1 teaspoon of sugar to the saucepan. Caramelize for 10 minutes, then set aside.
Preheat oven to 200 degrees Celsius.
After the dough has risen, knead it with salt.
Place the dough on a greased baking sheet and flatten it.
Sprinkle the caramelized onions, capers, and dried herbs on top.
Bake in the oven for 20-25 minutes, until golden brown.
Serve warm.
