turkey sausage
removed from casing

Bring 6 quarts of salted water to a boil in a large pot.
Heat 2 tablespoons of olive oil in a large saute pan over high heat.
Season the turkey sausage with salt and pepper.
Add the turkey sausage to the pan and saute, breaking up large lumps, until golden brown.
Remove the cooked turkey sausage from the pan and set aside.
Add 2 tablespoons of olive oil to the same pan and heat.
Add the chopped cremini mushrooms to the pan and season with salt and pepper.
Saute the mushrooms until all the liquid has evaporated, about 5 minutes.
Add the cooked turkey sausage back to the pan with the mushrooms and cook for another 3 minutes.
Remove the mixture from the heat and set aside.
When the water is boiling, add the farfalle pasta and cook until al dente, about 8 minutes.
Drain the pasta in a colander.
Return the drained pasta to the pot.
Add the turkey sausage and mushroom mixture to the pasta in the pot.
Combine the pasta and meat mixture thoroughly, then gently cook over medium heat for 5 minutes.
Drizzle the remaining olive oil over the mixture.
Add more olive oil if the mixture seems dry.
Check the seasoning of the dish and adjust as needed.
Turn off the heat and add the grated parmesan cheese.
Stir well until the cheese is melted and evenly distributed.
Serve the farfalle with turkey sausage and mushrooms in a large bowl.
