Boil the potatoes and keep them ready.
Cut and peel the fruits (apple, banana, pineapple, sweet potato) and keep them ready.
Heat ghee in a heavy bottomed pan or wok.
Roast the diced and boiled potatoes on medium high heat until browned.
Turn off the heat and keep aside.
In a large mixing bowl, add the roasted potatoes and the cut fruits (apple, banana, pineapple, pomegranate).
Add chaat masala, red chili powder, cumin powder, green chilies, lemon juice, coriander leaves, anardana powder and salt into the bowl.
Stir well to combine all ingredients.
Check the salt and spices and adjust to taste.
Serve as an evening snack or appetizer.
