Preheat oven to 350°F (175°C).
Coat a 9x5 inch loaf pan with nonstick spray.
In a large bowl, whisk together unbleached or all-purpose flour, whole wheat flour, wheat germ, brown sugar, white sugar, orange peel, baking powder, and baking soda.
Create a well in the center of the dry ingredients.
In a medium bowl, whisk together orange juice, applesauce, egg whites, and vanilla extract until well combined.

Stir just until moistened.

Pour the batter into the prepared loaf pan.
Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean and the bread is pulling away from the sides of the pan.
Let the bread cool in the pan for 10 minutes.
Remove the bread from the pan and cool completely on a wire rack before slicing and serving.
