Lightly grease a 20cm x 30cm lamington pan.
Line the base of the pan with baking paper, extending it over the 4 sides.
Melt the butter and milk chocolate in a heatproof bowl over a pan of simmering water or in the microwave on low.
Stir in the shredded coconut and finely chopped coconut macaroons.
Press the mixture firmly into the prepared pan.
Top with chopped red glace cherries and press again firmly.
Drizzle with melted dark chocolate.
Refrigerate until firm.
Cut into slices and serve.
