Marinate the chicken with red chilli powder, turmeric powder, and salt for 20 minutes.
Grind ginger, garlic, cinnamon stick, cloves, cardamom, poppy seeds, and dry coconut into a fine paste with hot water.
Heat sunflower oil in a heavy-bottomed pan over medium heat.
Add cinnamon stick, cloves, cardamom, and bay leaf and let them sizzle.
Add chopped onions and green chilies and sauté until lightly browned.
Add curry leaves and sauté for 4-6 minutes.
Add marinated chicken and sauté for 2 minutes.
Add the ground masala paste, remaining chilli powder, and turmeric powder.
Add water until the chicken is immersed and adjust salt.
Close the lid and cook over medium heat for 10-15 minutes, stirring frequently.
Simmer for 5 minutes until the chicken is cooked and oil separates.
Turn off the heat.
Sprinkle garam masala powder and garnish with coriander leaves.
Serve hot with rice or bread.
