Let sit for 30 minutes.
Place the gratin dish in a larger pan and fill the outer pan with hot water halfway up the sides of the gratin dish (creating a water bath).
Bake in the preheated oven for about 35 minutes, or until set.
Cool on a wire rack for 15 minutes.
Whisk the creme fraiche until soft peaks form.
Serve the bread pudding warm, garnished with whipped creme fraiche and chocolate shavings.
