Coat diced chicken or pork with sugar and soy sauce.
Heat oil in a frying pan or wok over medium-high heat.
Brown the chicken or pork in the warm oil and then remove from pan and set aside.
Add diced celery and onions to the oil and stir-fry quickly until they are still crisp and then remove from pan and set aside.
Add sliced mushrooms to the pan and brown them.
Mix the browned chicken or pork, celery, onions and mushrooms in the frying pan.
Add frozen peas and consomme to the pan.
Bring the mixture to a boil, stirring occasionally.
Serve over warm rice.
