Place foil-wrapped tortillas in oven to soften and warm.

Remove warmed tortillas from oven.
Fill each tortilla with approximately 1/4 of the turkey mixture.
Wrap tortilla envelope-style.
Place the filled and wrapped tortilla seam-side down on a platter.
Repeat steps until all 8 tortillas are filled and wrapped.
Fry two burritos at a time in the heated oil for 1 to 2 minutes on each side, ensuring even browning.
Fry seam-side down first to maintain a uniform shape.
Serve hot, topped with shredded cheddar cheese and sour cream.
