fresh peaches
sliced
margarine
minced red onions
minced
all-purpose flour
white wine or champagne
Sprinkle chicken breasts with lemon juice and pepper.
Cover the chicken with wax paper and microwave in a small microwaveable dish until cooked through (no longer pink).
Transfer the cooked chicken to a serving platter.
Add peach slices to the microwaveable dish and microwave on high for 1-2 minutes, until softened.
Remove the peach slices and reserve the cooking liquid from the dish.
In the same dish, mix 1/4 cup white wine (or champagne) with margarine and minced red onions.
Microwave on high for one minute.
Stir in the all-purpose flour until smooth.
Add 3 tablespoons of the reserved peach cooking liquid and the remaining champagne (or white wine).
Microwave on high for 3 minutes, stirring after each minute, until the sauce thickens.
Serve the chicken breasts topped with peach slices and the champagne sauce over noodles or rice.
