Remove bacon from skillet with a slotted spoon and drain on paper towels. Reserve the bacon.

Transfer chicken to a plate and cover to keep warm.
Add onion and red pepper to the skillet and cook, stirring, for 3 minutes.
Stir in sugar snap peas and water; cover the skillet.
Simmer for 4 to 5 minutes, or until vegetables are crisp-tender.
Stir in the cooked brown rice and transfer to a serving plate.
Top with the cooked chicken, Parmesan cheese, parsley, and bacon.
