Prepare all ingredients by chopping vegetables and measuring spices.
Soak the rice for 30 minutes.
Pound ginger and garlic in a pestle and mortar and set aside.
Add Figaro Olive Oil to a pressure cooker.
Sauté ginger and garlic for a few seconds.
Add chopped pearl onions and sauté until softened but not caramelized.
Add the spices, powder, rice, and vegetables.
Add water and salt to taste.
Cover the pressure cooker and cook for 3 to 4 whistles.
Turn off the heat and allow the pressure to release naturally.
Open the cooker and stir in Figaro Extra Virgin Olive oil.
Serve warm with Tomato Onion Raita and Vegetable Kurma.
