Cover the bowl with plastic wrap.
Refrigerate for 4 to 6 hours until the fish is opaque.

To prepare Yellow Rice, blend reserved onion and garlic, green pepper, and sweet chili pepper until thoroughly mixed.
Heat olive oil in a large pot with a tight-fitting lid.
Add the onion mixture, manzanilla olives, and chopped tomatoes.

Add uncooked instant brown rice and water.
Bring to a boil.
