Add roast beef strips to the bell pepper mixture and heat through, allowing it to brown.
Drizzle olive oil on sandwich rolls (or spray) and toast in a pan on high heat until crisp, or broil without olive oil.
Place provolone cheese on the toasted roll.
Top with the hot roast beef and onion/bell pepper filling.
Serve immediately, optionally with mayo.
