Make two slits in each brinjal, ensuring not to cut all the way through so the base remains intact.
Stuff the spice mixture into the slits of each brinjal.
Heat oil in a pan.
Add the chopped onions to the pan and sauté until softened.
Add the stuffed brinjals to the pan and cook for 2 minutes.
Cover the pan and let the brinjals cook until they are soft and tender.
Garnish with freshly chopped green coriander and serve hot.
