Chop spareribs into 2-inch sections.
In a bowl, mix dark soy sauce, orange honey, hoisin sauce, minced garlic, chili oil (if using), chopped green onion, thin soy sauce, and dry Marsala.
Place spareribs in the marinade and ensure they are well coated.
Marinate the ribs for 4-6 hours, turning several times to evenly distribute the marinade. For overnight marination, refrigerate and allow to come to near room temperature before baking.
Preheat oven to 350 degrees Fahrenheit.
Drain the ribs, reserving the marinade.
Place ribs on a rack in a roasting pan.
Bake at 325 degrees Fahrenheit for 45 minutes, basting with the reserved marinade every 15 minutes.
Increase oven temperature to 375 degrees Fahrenheit and bake undisturbed for an additional 15 minutes, or until ribs are slightly rusty in color.
Remove from oven and serve warm.
