Finely chop the medium onion.
Heat 3 tablespoons of olive oil in a pot over medium heat.
Sauté the chopped onion in the olive oil until soft and golden brown, approximately 5-8 minutes.
Wash 1 cup of lentils thoroughly.
Add the washed lentils to the pot.
Pour in 250ml of water.
Cover the pot and cook for about 30 minutes, or until the lentils are partially cooked.
Stir in 2 cups of rice and 2 teaspoons of salt.
Add 500ml of coconut milk and the remaining 250ml of water to the pot.
Stir well to combine all the ingredients.
Cover the pot tightly.
Reduce the heat to low and simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
