Wash and soak the arbi in salted water for 10 to 15 minutes.
Drain and wash again.
Dry the arbi.
Heat oil in a pan.
Add arbi to the pan and cook until golden brown.
Remove the arbi and place on a paper towel to drain excess oil.
Heat a little more oil in the same pan.
Add dry red chillies, asafetida, ginger, and garlic paste. Cook for 1 minute.
Add onion and cook until softened.
Add turmeric powder, red chili powder, salt, coriander powder, and garam masala powder.
Cook for 1 minute, allowing the spices to bloom.
Add tomatoes and green chilies. Cook for 3 minutes.
Add the cooked arbi to the pan and mix well.
Cover the pan and cook for 6 to 8 minutes, or until flavors meld.
Serve hot.
