Preheat oven to 220°C (440°F) and line a baking tray with baking paper.
In a large mixing bowl, combine sausage mince, breadcrumbs, grated onion, mixed herbs, and tomato paste.
Season with salt and pepper and mix well.
Cut puff pastry sheets in half.
Place a fourth of the meat mixture in a long log form in the middle of one pastry piece.
Roll the pastry around the meat mixture, leaving a little at the end.
Brush the end piece of pastry with beaten egg.
Finish rolling and press gently to seal.
Place seam side down onto prepared baking tray.
Brush the tops of each sausage roll with egg.
Place filled baking tray into preheated oven and bake for 30 minutes or until golden brown and crisp.
Serve hot with your favorite sauce.
