Prepare the dough: In a bowl, combine whole wheat flour, plain flour, salt, and ghee. Add warm water gradually and knead into a smooth, soft dough. Cover and set aside.

Prepare the filling: Boil and mash potatoes. Finely chop spinach and onion. Crush garlic cloves.

Mix the filling: In a bowl, combine mashed potatoes, chopped spinach, chopped onion, crushed garlic, grated cheese (optional), chilli powder, chaat masala, amchur powder, and salt to taste.

Divide the dough and filling: Divide the dough into equal portions. Similarly, divide the filling into equal portions.

Stuff the parathas: Take one portion of the dough and roll it into a small circle. Place a portion of the filling in the center. Bring the edges of the dough together to seal the filling inside. Flatten gently.

Roll out the parathas: On a lightly floured surface, gently roll out the stuffed dough into a paratha (flatbread).

Cook the parathas: Heat a griddle or pan over medium heat. Place the paratha on the hot griddle and cook for a few minutes on each side, until golden brown spots appear.

Roast with oil/ghee: Apply oil or ghee to both sides of the paratha while cooking.
